As you journey through Hyrule in The Legend of Zelda: Echoes of Wisdom, Zelda herself will be able to acquire a number of accessories and clothing options that can be equipped or unequipped — many of which provide different passive bonuses when worn.
All equipable options are found in the Equipment menu, with wearable items separated into Accessories and Clothing. While some clothes are purely cosmetic, most equipment has an associated effect that can make a difference in specific situations.
Accessories are passive equipable items that allow Zelda to move faster in certain environments, increase your chances to find certain items, and other perks. Initially, you'll only be able to equip one at a time, but by giving Rupees to the Great Fairy in Lake Hylia, you'll be able to expand the number of Accessory slots and equip more at a time.
How to Change Outfits
While Zelda will need a disguise to move around Hyrule early in her adventure, you'll be able to progress the story to a point where you can begin to obtain new clothing outfits. Some are merely cosmetic, but others can have bonus effects when worn.
You'll specifically be able to change outfits after you've completed the main quest called Still Missing. Side quests that reward outfits for completion are unlocked after that main quest is completed too.
Once you get your second outfit you can change outfits in the Equipment menu under the Clothing section.

After completing the Still Missing Main Quest, Zelda will be able to swap between different clothing outfits, and can unlock additional exclusive outfits when using certain Legend of Zelda-themed amiibo. See the list of all currently known clothing options below.
