Finally got to this after putting it off for almost 3 years - Final Fantasy VII Remake Intergrade: INTERmission is a great piece of downloadable content for FFVII Remake.
With a story that plays a bit like a Rosencrantz and Guildenstern version of a portion of the base game, it gives a proper introduction to one of the optional characters from the original Final Fantasy VII. Yuffie plays like a dream, with elemental attacks automatically integrated into one of her core abilities which makes combat more satisfying when you're not necessarily required to switch loadouts every single fight (though if you're anything like me you'll find you still do).
She's joined by a new character named Sonon who's only partially playable - so the dynamic of switching between your party members is a bit lost when you can really only control Yuffie at any given point (though you can still at least issue commands to Sonon so there is that).
I will say that it's a bit odd that with Yuffie's character having such a heavy emphasis as a thief and with stealing so incorporated into her abilities that the rewards are fairly minor - no weapons or unique items that I could find at least. Seems like a missed opportunity.
The endgame gauntlet was a bit ridiculous and required very specific strategies but I still enjoyed it.
The way the story wraps up falls a bit flat with a lower investment in these characters but there's room to grow.
Overall definitely worth a play and has content to spare for those who want to dive deeper.

Good primer before Rebirth. Yufie is somewhat annoying though.
